If you have an offset smoker or a decent sized kettle barbecue, this recipe is a simple one, it requires minimal prep, and is always a crowd pleaser. We use our Life’s a Peach BBQ sauce to add a fruity tang, and finish with our Golden Syrup to add a nice sweet spiciness.
For this recipe we’ve kept the rub very simple, to let the flavour of the meat and the sauce speak for itself.
We’re utilising the 2-2-1 method. Cooking the ribs for 2 hours unwrapped to allow the meat to take on the flavour of the wood-smoke, then wrapping the meat for 2 hours to steam in the sauce, and finally uncovering for the last hour to form a nice sticky crust around the edges.
Sticky Barbecue Ribs
Using our Life's a Peach and Golden Syrup sauces, these ribs come out sweet, tangy and spicy every time.

Ingredients
- 1 Rack Pork Ribs
For the bind
- 60 ml Khoo's Life's a Peach sauce
- 40 ml American Mustard
- 20 ml Lemon Juice
For the rub
- 1 tbsp Sea Salt
- 1 tbsp Course Black pepper
- 1 tbsp Paprika
- 1 tsp Garlic Powder
- 1 tsp Dried Thyme
For the wrap
- 80 ml Khoo's Life's a Peach sauce
- 100 g Salted Butter
- 60 ml Apple juice
For basting and glazing
- 80 ml Khoo's Life's a Peach sauce
- 80 ml Khoo's Golden Syrup
Instructions
- Arrange your coals and wood ready for offset cooking in your smoker or barbecue. I recommend using cherry wood for this if you have some available.
- Preheat your smoker or barbecue to 115℃
- Use a knife and carefully remove as much of the membrane from the bone side of the ribs as possible.
- Combine all of the bind ingredients and rub the baste all over the rack of ribs.
- Combine all of the rub ingredients and cover sprinkle over the ribs, making sure to spread the rub evenly across both sides of the rack.
- Place your rack of ribs in your smoker or barbecue ready for offset cooking. Cook at 115℃ for one hour. Baste the ribs with Life's a Peach sauce and turn it over. Cook for another hour.
- Time to wrap your ribs in foil. Arrange a double layer of foil big enough to fully wrap the ribs. Chop your butter into several lumps and arrange on the foil. Place the ribs on top and pour over Life's a Peach sauce and apple juice. Wrap the ribs tightly in the foil. This will essentially steam the ribs in the sauce.
- Cook the wrapped ribs for a further 2 hours at 115℃.
- Remove the ribs from the wrap and return to the barbecue for one last hour. Turn the ribs and brush with Khoo's Golden Syrup every 20 minutes.
- Get them off the barbecue, chop the rack into portions and absolutely lather them in our Golden Syrup ready to serve!
