Fiery Apricot Ginger Chicken Thighs
Ingredients
- 6 Chicken Thighs
Marinade
- 2 tbsp Lemon Juice
- 2 tbsp Khoo's Super Sauce
- 1 tbsp Minced Ginger
- 1 tsp Sea Salt
Glaze
- 2 tbsp Lemon Juice
- 4 tbsp Khoo's Super Sauce
- 1 tbsp Light Soy Sauce
- 2 tbsp Honey
- 1 tsp Black Pepper course
Garnish
- 1 tsp Red Chilli finely chopped
- 1 tsp Chives finely chopped
Instructions
- Combine all the marinade ingredients in a large mixing bowl.
- Add the chicken thighs, ensure that they are covered throughly with marinade. Refrigerate for 3 hours.
- Preheat the oven to 160℃. Combine all glaze ingredients in a small bowl.
- Place the thighs skin side up on a wire rack tray, brush thoroughly with glaze and bake for 20 minutes.
- Take thighs out of the oven, brush with glaze again and return for another 20 minutes.
- Take thighs out of the oven, brush with glaze again and return for 30 minutes at 140℃
- Remove from oven, garnish and serve.
