Bajan Coleslaw

  • 200 g White Cabbage
  • 200 g Red Cabbage
  • 2 Carrots Large
  • 100 g Red Sweet Pepper
  • 1 Red Onion
  • 8 tbsp Bajan Hot Sauce
  • 5 tbsp Mayonnaise
  • 2 tbsp Cider Vinegar
  • 1 tsp Cracked Black Pepper
  • 1/2 tsp Sea Salt
  • 1 Lemon (Juice of…)
  • 1 Red Jalapeno (to garnish)
  • Chives (to garnish)


  • Cut the cabbage, sweet pepper, and onion into very fine strips. Combine in a bowl with the salt, vinegar and lemon juice and leave to soak for 1 hour.
  • Grate the carrots and add to the bowl.
  • Add mayonnaise, Bajan hot sauce, red onion and black pepper and mix well.
  • Garnish with finely sliced jalapeno and chives and serve.
